Short and Sweet!

Hello fellow blogger friends! Yes, I am still alive! I have been crazy busy with life in general:) Also, I have been kicked off of our computer so many times due to Kay's homework and my hubby's fantasy sports stuff. Anyhow, I am back. I promise that tomorrow I will play catch up on everyone's blogs! I feel so bad because you all know how much I love to leave you comments! Thank you so much for all of the wonderful comments that I have received from my last post.....I really appreciate them and they always make me smile:) They also make me feel so loved!! I took Sunday off from running but still managed to do my push-up challenge homework! Jeff, I promise you that I will post my stats on Saturday! I have been very faithful to my plan and have been doing my daily workouts! Monday evening I went on a six mile run and it felt terrible. My legs felt like they weighed one-hundred pounds and my mojo was no show for the night. I managed to keep a nine minute mile pace. Like I said, it was crap! I really wanted to keep a 8:30 pace but I just couldn't do it. Tuesday evening I went out again and took a different running route. I only ran four miles but this run was felt so much better than Monday's. I attempted to focus on my speed and I felt like I was doing a much better job at keeping my breathing slow and regulated. Tonight was gorgeous and I was so excited for this run. I headed out to the Rice Lake Trails and ran around the lake. It was so beautiful. I think so many other runners had the same idea....tons of runners out tonight:)











After I ran around the lake I ran a two mile cool down, making my total for the evening seven miles:) My plan for the rest of the week is to basically run every night. Saturday morning I will drive to St. Cloud to run with the running group:) I have one more week before my next 10k....I have some work to do.I hope that everyone enjoys the rest of their week!! Congrats to Jill, Glenn, Georgia Snail, LMC, Jennifer, Ajh, Jon, JF, Colin, Sarah; Johann and Rick for doing so well at weekend races!! Woo hoo for all of you who PRd!! I enjoyed reading all of the race recaps:) Cheers and happy running!!

  4. Great Job on your race! I've been so behind but I did read your recap! I'll be in St. Cloud this weekend! Maybe I'll see you run by! My husband sometimes gives me compliments on my toned arms but I'm certain its a precursor for something else. Seems to work, though..lol!! Where's the 10K?

  5. Where did you find that shirt!? Vintage Top Gun, that's when I loved Tom Cruise, before he got all nutty. Nice Guns, gotta love it when the husband's pay attention and give props for all the hard work!

  7. Great job on the "trifecta" (3 in a row)of runs. Doesn't everybody feel like crap for a Monday run?! You'll be fine by the time your 10K comes. I'm glad to see your husband's fantasy sports (baseball) take priority for computer usage! Yes, I love playing fantasy baseball myself. Maybe it's time for a laptop for you and Kay to share?! :-) Have a great rest of the week.

  24. Thanks for all of the great comments guys:) I loved the movie Top Gun and saw it in the St.Cloud theater 7 times when it first came out! I loved Tom....this was before he got wierd:)

  25. Too funny. I watched part of Top Gun last week cuz it was on TV. I loved it when it was new and I watched it like 100 times on VHS.

    I do hope you'll enjoy your training on Saturday morning with the running group :)

    In the comment you left on my blog last Friday, March 19, 2010, you asked me the recipi of "Zeppole", the most common pastry treat for Father's Day in Italy. The word zeppole comes from "zeppelin." This gives you an idea of how much the pastries puff up during frying.
    As request, I write this recipe here below:

    Ingredients
    2 cups water
    10 oz granulated sugar
    3 tbs olive oil
    1/2 tsp salt
    2 cups flour
    2 large eggs
    1/4 cup light, white wine
    oil for frying
    powdered sugar

    Directions
    1.Mix water, sugar, and oil in a heavy
    saucepan and bring to a boil.
    2.Mix flour into boiling water all at once.
    3.Remove from heat and begin whisking or
    stirring with a wooden spoon until the
    mixture forms a mass.
    4.Return to low heat and cook 5 minutes,
    stirring constantly.
    5.Remove from heat, and add eggs 1 at a time.
    Beat vigorously after each addition or the
    egg will cook.
    6.Add wine and beat the dough until satiny.
    7.Grease a countertop or board with oil.
    8.Turn out the dough and pat down flat.
    9.Fold sides over on itself so there are 3
    layers. Repeat this five more times.
    10.Heat oil in a large pot or fryer.
    11.Take about 1/3 of dough and roll out in a
    log, to the thickness of your thumb. Pinch
    off a tsp size piece.
    12.Place 3 or 4 at a time into boiling oil.
    13.Turn and fry until golden on both sides.
    14.Drain on brown paper.
    15.Place into a paper bag and sprinkle
    powdered sugar over them. Close the bag and
    shake to cover with sugar.

    Note: Some cooks like to form the zeppole into rings, more like a donut. You can add ground sage, ground bay leaf, and other savory seasonings to the batter. Instead of using white wine, try Amaretto liquor or Marsala wine.

  40. "Oh Rick, what the hell is it with guys and ponytail girls? I just don't get it:)" Oh Julie, it's weird. There's just something about a girl with a ponytail running that looks so....well, nice! I really can't explain it. Maybe it's just seeing the effort being put forth causing the ponytail to bounce around?! I guess it's something that needs to be analyzed by a shrink! Glad you have a sense of humor about it. :-)

I would love to talk with you about the gluten-free stuff anytime - I have been trying it out for about 5 weeks - I think it is helping (maybe it's just wishful thinking but I really do think it is helping!). I have been having some seemingly weird physical things going on the past 7 months or so, and this is one thing I am trying out to help.
